Froth : Revamp with New & Exciting Menu

Froth is no longer at Big Hotel. This time round, the newly revamp Froth at Ascott Raffles
Place Singapore is just a stone's throw away from Raffles Place MRT Station with
140-seater restaurant exudes a minimalist vibe and ops for the dichotomy black and white
as its colour scheme. The design looks gorgeous and have a feeling of fine-dining type.

Its muted interior design however belies the adventurous culinary journey that Chef Derrick
bring his guests on. The chef playfully imbues western classics with a local flair.
Featured the menu on both brand new dishes as well as all time favourites


Hot & Cold Foie Grass ( $23.90++)
Hot : Pan seared foie grass on toasted butter brioche with pomegranate and truffle honey apple
reduction. Cold : cut through the chilled foie gras to find a liquid centre of apple and kiwi puree.
Its chilled with crushed sable, crunchy celery and granny smith slaw.




Lobster Jelly ( $22.90++)
Chilled fresh lobster with a wobbly tomato jelly made from scratch.  Marinated vine cherry
tomatoes, edible flowers and cresses are adding on to the flavours to the dish as well.
Wasabi and ginger powder plays a part on lending japanese sensibilities.



Five Spicy Wagyu Patty Burger ($34.90)
Homemade five spice wagyu patty wrapped in crispy bean curd skin and completed with
baby arugula and tomatoes on a soft brioche burger bun. The patty makes me think of
traditional ngoh hiang which really looks alike on they prepare the wrapped burger.
On top of that, you get to eat the truffle fries.




SioBak Aglio ($25.90++)
You have Pasta and have Sio Bak in one go ?
The chili linguine was a bit of spicy but it is a kick of notch flavour throughout the entire dish.
Homemade slow roasted pork belly with a delightfully crisp crackling is the perfect
combination with bak-gua inspired honey pork bacon.



Seafood Tom Yum Risotto ($29.90++)
Calling for seafood lover ! Don't miss this comforting mainstay,
Tom Yum pumpkin risotto comes with grilled tiger prawns, flower clams and squid



Ponzu Soya Cod ($35.90++)
Soft yummy cod fillet cooked using sous vide technique.
The fish is placed in a 45 degree celsius water bath for 50 minutes, and then paired
with ponzu and sesame soya glaze. The skin is then charred to achieve a crispy crackling. 
Wasabi edamame puree, smoked mash, baby peaches and bok choy round out the dish.



French Toast Waffle ($16.90 )
YAY ! Come to quite a special dessert which it is different from other type of waffle they have.
The waffles are first half cooked in the waffle iron, then coated with French toast batter and deep fried to perfection.
Drizzled with condensed milk and topped off with cereal flakes and a scoop of gourmet ice cream.
Toasted marshmellows ice cream is no doubt for its wonderful flavour.
