Hidden away on the edge of the CBD district in Singapore and along the stretch of Japanese restaurants, Hakata Ikkousha is knowns as Ramen's house that serves exquisite Japanese cuisine.
This cozy restaurant is a great place to relax and to have a good meal right after work.
IKKOUSHA owns 42 other restaurants all over the world including England, Indonesia, and China. After winning Singapore’s Ultimate Ramen Champion in 2011, as part of winning, Ikkousha began setting up his own eatery in Tanjong Pagar.
As momentum built up, Ikkousha has gotten a second win the following year of Singapore’s Ultimate Ramen Champion, resulting in another store in CHIJMES. In a short period, they have had 2 stores well established, serving Singaporeans piping hot ramen so unique in taste that draws them apart from those ordinary ones we've got here.
IKKOUSHA HAKATA, as its name implies, “Ikkousha” means “one happy place”, and it expresses the principle of Chef Kousuke Yoshimura.“Hakata” is the name of a town in Fukuoka city, Japan.
The ramen that they serve is Tonkotsu, which translates as broth that is made from pork bones.
In Hakata, it is renowned for its Tonkotsu ramen, and it is one of the most famous food in Fukuoka
and one of the “die die must-try” food when one visits Fukuoka. We are fortunate to be
able to experience the specialty of Hakata without the need to leave the country.
It all comes down to the broth. It is the broth that separates good ramen from the bad ones. Made using pork bones that are simmered for many hours, this time-consuming process of culminating the broth turning it into white and creamy goodness.
Every mouthful of this high collagen broth will blast you with flavour so rich, you will feel like swimming in it for days.
Apart from the heavenly Tonkotsu broth, is the specially made condiment called “ karashi takana”.
This condiment is slightly spicy and salty. As Japanese food is saltier than Singaporeans’ taste bud, it is advisable to put a little at a time until it is just right for you.
The combination of the karashi takana and the Tonkotsu broth is heaven and earth.
The ramen is so rich in flavour and I was so tempted to finish the broth after the ramen.
The ramen is fully customizable, from the texture of the noodle to the thickness of the broth.
